I seem to be having trouble getting anything at all done this week. There are mountains, literally, of laundry in my room that need to be done and don't even get me started on the dishes. I have an aversion to chores, I just despise them. If I was rich the one luxury I would have is a cleaning service. Despite all of that I always manage to get dinner cooked, I enjoy cooking so it usually isn't a problem unless I am just in the mood to eat out. A few days ago I made an incredible dinner from another Weight Watchers recipe- Chicken Mozzarella with Penne. Seriously, I could not tell it was low fat at all, it was that good.

To start you will need:


Throw your noodles in a pot and cook according to package. Put your egg substitute in a bowl. Put your panko breadcrumbs on a plate or shallow dish. The recipe called for italian seasoned panko and I only had plain so I just threw in a palmful of italian seasoning.


Next you need to season both sides of your chicken with salt and pepper...


Dip the chicken in the eggs:


And then roll it around in the panko breadcrumbs pressing while you do...


Heat a tablespoon of olive oil in your skillet and add your chicken. I had the heat on medium so the outside wouldn't burn- just make sure your chicken isn't too thick because then there is really no stopping it from burning.



When your chicken is finished set it aside and pour the spaghetti sauce into the same skillet the chicken was just in. Scrape it good the get all the good brown bits mixed in. Heat it through.



To plate it put 1/2 cup of noodles on your plate and place the chicken on top of them. Top that with 1/2 cup of sauce and a heavy pinch of mozzarella cheese. The finishing touch is basil. Just take a handful of basil leaves roll them up and shop them. Throw that on top and you have a great dinner. Seriously, it is awesome. I wouldn't lie :)


And though this is totally random, I just have to add that I think American Idol is already better than it has been in years- Steven Tyler is a real gem and I think they need to keep him forever. Oh and The Bachelor is really good so far too (Team Emily). I know those two show have absolutely nothing to do with the recipe above but I just had to let people know how I felt about it. That is all.

It is January 17th and I have yet to make it to the gym one single time... I guess you could say I find excuses to avoid exercise. It never really has been my cup of tea. The experts tell you to find an exercise you consider to be fun and that way you will stick with it; well what do you do when every exercise in every form makes you groan at the thought of it?

That being said, I have set a goal this year to be able to run 5 miles. Well obviously if I never make it to the gym then it isn't going to happen. So this week I will aim to make it to the gym one time. I know if I just get the first visit over with then it will be easier the second time. In the meantime though I will hide inside from the cold and stuff y face with some yummy potato soup.

What's that you say? You want potato soup too? Well lucky for you it is souper (pun intended) easy to make.

Your starting lineup:


You want to chop 2 slices of bacon and throw it in a pot over medium high heat. While the bacon is browning, chop your onion. It's all about multitasking people! Let the bacon cook until it starts to brown, like so...



Throw in the onion and move it around to coat it in the bacon grease that is sure to find itself adhered to your backside later :)


Let the onions sweat out a bit and then add in half a bag of these bad boys:


Give it all a good stir. Throw in some salt and pepper for good measure. This is what you should be looking at now:


Add in a can of chicken broth, cover and bring to a boil. Let it boil for 4 minutes.


After the 4 minutes, remove it from the heat and using a potato masher, mash it all up. I didn't have a potato masher so I just used my handy dandy spatula.


You will be left with a thick mixture, but never fear, the milk is here. Add in about a cup of milk...


Stir it all up and put it back on the heat just to warm it back up a little.


I served mine with green onions and cheese on top.


It was so good. I love potato soup. O'Charley's has the best around but this will do fine in a pinch. Oh and it came together in 15 minutes, and that my friend can not be beat.

I managed to get the tree taken down today and the rest of the presents have been put away as well. It feels so much better in here already. There is just something about having a tree up after holidays that makes me feel cluttered.

This morning I woke up and decided to try something new for breakfast...



It was a complete fail. This is my third time trying greek yogurt and my third time hating it. I have tried three different brands to no avail. It is so bitter it is hard to eat it. I forced my way through it though. I got it for free with a coupon, so no loss there at least.

Dinner was a winner. I made Vegetarian Enchiladas and Corn and Onion Rice Pilaf. I got the recipes out of a Weight Watcher Cookbook and so I cannot share exact amounts with you but I will walk you through it anyway.

To make the enchiladas you need:


Spread the beans on the tortilla and put your ground "meat" down the center of it. I choose to use Morningstar Farms ground beef crumbles but you can use whatever you like.


Roll the tortillas up and place them seam side down in an 8 inch baking dish, like so...


Top with enchilada sauce and cheese and bake at 400 degrees for 15 minutes.


When it comes out it will look like this:



Of course, no enchilada would be complete without rice on the side. Here is what you will need for that:



Cook the rice according to the package. Saute onions and corn until the start to brown. Stir in cumin and butter, and cook for 2 more minutes. Remove from heat, stir in rice, salt, and pepper.

Like I said, dinner was a winner. You must make this, it is seriously wonderful. When I told the Marshmellow Baby there were no leftovers, this was her response...
